Not to confuse you, but Bø is not only the name of the parish, but also a name of a farm there. Here is a map. You might want to click on zoom ut, to see the farm.

With the map suggested by Lislecat you can search for all the subfarm and main farms Tangen, Bø, Skogen, Bø, Skjelbreid, Folkestad, Liene, Aase,
Zooming and clicking on "Hybrid" gives you a birds view of the buildings.
If you put "Skjelbreid" in the rectangle to the left of "Søk i kart" and hit Enter you will get several choices, click on "Bø (Bruk (gardsbruk))". If you zoom ut (out) in the map you get you will find Folkestad to the south.

So, the main farms were owned by private landowners and rented by those operating them? Also, were they mainly crop farmers instead of livestock?

The products of farms would vary greatly by their geography and topography, just as they do today. These things are difficult to simplify to broad generalizations.

I'm still digging here...Aagoth (above) born to Helje Olsen and Anne Olsdatter on 11/28/1813 was a twin. Can anyone make out a name for the twin?

His name was Brynjul, he was batized at home and died only 3 hours old. see top of far right column.

Regarding Peter Rollevsen and Gunild Svennungsdatter on the 1801 census - am I correct the two children listed below them would be their daughters?

Parish church records for Bø, Telemark are still available for years as early as 1689. That will give you plenty of material that you can research the earlier generations in.

Also a couple of bygdebøker for that area may be of use to you in your research: "Bø-Soga I: Telemark, by Gunnar Lunde; "Bø-soga II : Telemark, gards og ættesoga", 4 volumes by Stain Hennesied and Gregar Nordbø.

Any information on another possible son of Aslak and Aagoth Evensen - name is Ole Aslaksen born Sept. 17. 1839 Bo, Telemark. This would make three sons (Svennung, Even and now Ole) that did not immigrate in 1845, only a daughter Helge.

Baptismal record for Ole is #89.
Parents Aslach Evensen and Aagaat Helgesdatter, Skjelbrei at Folkestad i Bøe.

I notice the difference in the spelling of Aslach and Aagaat in the birth records of the children. Is it common to find variations in name spelling?

Variations in spelling are common, depend on time periode, the writers background and practice in different areas.

I believe I may have found two other children of Even Andersen and Helge Svennungsdatter however I can't make out their given names or the farm name listed under the parents. BØ records indicates a daughter born 26 Jan. 1816 and a son born 22 March 1818. A death record looks like the son died 6 Oct. 1821 - still searching for more on the daughter.
