pastor writes it down his churcb book but ii is not always written down on the same day the pastor was told and pastors have been known to write the wrong date lots of time

why is the church book dated 1846 and not 1845

Because this Bernt was born 19 December 1845 (according to the church book, as you can see) and baptized 08 March 1846.
