How to Write Surnames in my Pedigree Chart

I am working with a hand written Stamtavle. I am trying to get all the names and information on it into my computer ancestral file. I've been doing great up until I came across the following names: Jens Olsen Uttisrud-Sørby and Sidsel Aslaksdatter Herrød in Aremark I'm not sure how to put these names in. Was Sidsel's Surname Herrød or Aremark? Does anyone have any ideas?
