Okay, here is a listing of Carl Jakobsen b 1844 in the Norwegian 1865 and 1875 censuses and there appears to be only one who was a sailor Carl Gustav Jakobsen :
https://www.digitalarkivet.no/en/search/persons/advanced?from=&to=&jt%5B%5D=5&jt%5B%5D=7&firstname=carl&lastname=jakobs*&birth_year_from=1844&birth_year_to=1844&birth_date=&birth_place=&domicile=&position=&event_year_from=&event_year_to=&event_date=&related_first_name=&related_last_name=&related_birth_year=&sort=rel

Okay from birth /baptism records in Norway, Carl b 1844 with a father named Jakob:
https://www.digitalarkivet.no/en/search/persons/advanced?from=&to=&firstname=charl&lastname=&roles%5B%5D=barn&birth_year_from=1844&birth_year_to=1844&birth_date=&birth_place=&domicile=&position=&event_year_from=&event_year_to=&event_date=&related_first_name=jakob&related_last_name=&related_birth_year=&related_roles%5B%5D=far&sort=rel

He seems to match this Geni-profile, which gives his date of birth as "after 1844".

This is likely the birthrecord of seaman Carl Gustav Jacobsen from Christiania/Oslo:
But not a perfect match... Father is Jacob Christophersen and mother is Randi Olsdatter
Would expect the fathers' lastname to be Svendsen, and mothers first name to be Marie.

What does the marriage certificate really say about his parents? Spelling?

Being a sailor, with a father who works as a shipbuilder, and emigrated to NZ in the 1870s ... everything indicates that he is from the south coast of Norway.
I have a strong feeling that his hometown is covered by the red line in this map.
And possibly from the southern tip of Kristiansand and eastwards towards Oslo and the Swedish border.

A DNA test can sort your DNA by the geographical areas from which you probably inherited it.
Not sure if it could give you a specific Norwegian area ...?
